Try deleting the preference files. I use track changes all the time on MS Word on my Mac and it normally works fine. Also you say this is reproducible behaviour on different files so it is clearly something to do with your specific installation. I suspect it might be due to a corrupt preferences file.
Anyway it would be worth testing this by removing the word preference files - try both the /Library/Preferences/com.microsoft. Files /Library/Application Support/Microsoft files. If you have more than one user account set up on your machine you could start off by seeing if the problem occurs on all user accounts.

Turns out there was problem with the file system on the mac. 'There is an unrecoverable disk on file. The disk you're working on has media problem that prevents word from using. Try the following 'Try formatting another disk.
Save the document to another disk.' Is a bit of dead give away when read again once the red mist had subsided.
I found saving the offending file to USB stick the problems went away. Obiviously not a permanant solution! Using the disk utlitfy with 'verify' id bad parts of the files system. A reboot with cmd+R opened the menu to do a repair of the disk. Took about 8 mins to complete as it compared the journal to the ondisk data.
